I have installed Skype, VMware and Adobe Reader on my Ubuntu, but that's about it for non-open-source software.
If you go to Applications->Add/Remove you'll see tons of open source stuff. Enough to keep you going for months. Particular favourites of mine are
Filelight
Armagatron Advanced
Frozen Bubble
gbrainy
gimp
gPlanarity
Tomboy Notes
Trigger
and Rhythmbox
There's even more stuff if you search Google with phrases like "Ubuntu music software". You can switch to System->Administration->Synaptic Package Manager to download some of the odder bits and pieces (Synaptic is the gui equivalent of apt-get)
