Would it be fair that the UK allows Polish family law to be used here?

It's quite OK - Polish Family and Guardianship Code (1956 & 1964).

Just seems like we will be living in a pick 'n' mix legal system shortly and it's only fair then that anyone can choose what law they will follow.
